Ingredients:
- 2 lbs shrimp (or any other mild seafood)
- 2 avocados
- 1/2 red onion
- 2 cucumbers
- small bunch cilantro
- lime juice
- butter
- salsa (I used Mateo's)
- salt, pepper, onion powder, garlic powder & paprika
For the shrimp:
Season shrimp with salt, pepper, paprika, garlic powder and onion powder then
saute on low heat in one tablespoon of butter. Once the shrimp is fully cooked, drain
any remaining liquid and cool shrimp completely in the refrigerator.
For the sauce:
Mix two avocados, a few table spoons of salsa, a few tablespoons of lime juice along
with salt, pepper and garlic powder to taste. Mash and stir until mixed.
To finish:
Cut cucumbers into desired size (I cube mine into 1/4's). Dice red onion and chop cilantro. Combine all ingredients in a large bowl and stir to combine. Top with more cilantro, red onion or lime juice as needed.
Side notes:
This recipe will make roughly 2-4 portions and take about 30 minutes from start to finish. This dish can be done in so many different ways...swap out the shrimp for any other protein or mild seafood but note that it is best to keep the pieces somewhat small. Love cheese?
