Ingredients:
- 2-3 lbs sirloin roast or your favorite cut of beef
-"The Classic" marinade by The New Primal (linked below)
or your favorite savory marinade or beef broth
- Medium bag of carrots
- 5 lbs red potatoes (russet or yukon gold will work fine too)
- Salted butter
- 8 oz sour cream
- Salt, pepper, onion powder, garlic powder, chili seasoning
For the meat:
Add sirloin roast to a casserole dish and top with marinade covering at least halfway
up the sides of the meat. Cover with foil and bake at 275 degrees for about 5 hours.
For the carrots:
Peel and cut carrots then add to a small casserole dish. Rub with butter and sprinkle
with salt, pepper, onion powder, garlic powder and chili seasoning. Bake uncovered
at 350 for about 30-45 minutes depending on desired texture.
For the mashed potatoes:
Peel and cut potatoes then boil until fork tender. After straining potatoes add to
mixer with a few tablespoons of butter, sour cream and salt and pepper to taste.
Side notes:
This dish is so cozy, traditional and will make about 4-6 portions. Allow most of the
day for the meat to cook and for prep cooking of sides. Easily swap out the meat or
veggie for your favorite!
